Delizie Vesuviane Fresh Cow's Milk Mozzarella

For the dressing

 

Extra virgin olive oil

Balsamic vinegar

Salt and pepper to taste

STEPS:

To make the dressing:

  1. In a small mixing bowl add in the olive oil and balsamic vinegar. Season with salt and pepper. Whisk until olive oil and balsamic vinegar is emulsified.

To make the salad:

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, add in the pasta, arugulla, cherry tomatoes, onions, basil leaves, chicken, and mozzarella balls.
  3. Pour in the dressing and toss everything together until the salad is coated with the dressing. Adjust with salt and pepper as needed.
  4. Serve or for the best results, cover and refrigerate at least 30 minutes.
