STEPS:
To make the dressing:
- In a small mixing bowl add in the olive oil and balsamic vinegar. Season with salt and pepper. Whisk until olive oil and balsamic vinegar is emulsified.
To make the salad:
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions. Drain and rinse under cold water.
- In a large mixing bowl, add in the pasta, arugulla, cherry tomatoes, onions, basil leaves, chicken, and mozzarella balls.
- Pour in the dressing and toss everything together until the salad is coated with the dressing. Adjust with salt and pepper as needed.
- Serve or for the best results, cover and refrigerate at least 30 minutes.
