STEPS:
- Boil clams until they open. Set aside the clams and clam juice. Once the clams are cool enough to handle, remove the clam meat from the shell and chop it. Set aside.
- Heat olive oil in a pan over medium heat and sauté celery, carrots, onions, garlic, and parsley.
- Add flour and cook until lightly browned.
- Gradually pour in clam stock, whisking continuously until it thickens.
