La Cuna Bomba Rice

Lemon (sliced into wedges)

STEPS:

  1. Using a paella pan or flat skillet, sauté chorizo and chicken in olive oil. Season with salt and pepper.
  2. Add in onions, bell pepper, garlic, chopped tomatoes, paprika, and paella seasoning. Sauté over low heat.
  3. Add in seafood and stock. Season with salt and pepper. Cook seafood until half done and the stock has reduced. Set aside seafood on a separate plate.
  4. Add in the rice. Bring to a boil, stir, and adjust the seasoning. Lower down the heat and cover the pan with a lid. Cook for 15 minutes.
  5. Once the rice is cooked, arrange the seafood and peas on top. Cover and cook for another 7-10 minutes.
  6. Serve the seafood paella with slices of lemon and aioli while hot. You can also top yours with boiled egg (sliced in wedges). Enjoy!
