Doenjang Pasta

This dish captures everything we love about modern Korean cuisine: humble ingredients elevated with depth, balance, and a touch of luxury. Inspired by the series, this recipe brings the royal-level umami straight to your table.

Clams & Mussels

Water 4 cups
Salt 2 tbsp
Dolce Vita Spaghetti 3 Pasta 75 g
Doenjang Sauce:
Mazza Olive Oil 2 tbsp
Garlic, minced 1 1/2 tbsp
Doenjang 1 tbsp
Water 2 tbsp
Clams 5 pcs
Mussels 5 pcs
XO Chili Crisp 1 tbsp
White Sugar 1/2 tbsp
Sake 2 tbsp
Pasta Water 1 cup
Gran Cucina Cooking Cream 1/4 cup
Salt, to taste

Pepper, to taste

Garnish:

Mazza Green Pesto

Salted Cashew Nuts, crushed 

Extra Doenjang Sauce

Mussels


STEPS:

  1. Purge and Shock the Clams & Mussels

  • Boil Water with salt; once boiling add the clams and mussels for 3-5 minutes or until open. Then shock it with cold water. Set aside.

  1. Cook pasta until al dente. Reserve ½ cup of pasta water before draining. Drain and set aside. 

Make the Doenjang Sauce: 

  1. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

  2. Stir in Doenjang paste and water to loosen it.

  3. Add the cooked clams and mussels to the pan.

  4. Stir in chili crisp, sugar, sake, and reserved pasta water

  5. Bring everything to a simmer and cook for 5 minutes.

  6. Finish the sauce by adding cooking cream, then stir to combine. Season with salt.

  7. Add the cooked pasta to the sauce and toss to coat.

  8. Plate pasta and garnish with extra shellfish, and extra doenjang sauce. Add Pesto on top of the pasta then sprinkle over the crushed salted cashew nuts.
