Linguine Vongole
Summer isn't complete without enjoying a seafood pasta meal on a beachfront with white wine!
Linguine Vongole

Cooking time: 25 minutes

Here's what we need:

Dolce Vita Linguine Pasta 500g

Mazza Extra Virgin Olive Oil

1/4

cup

Pigiato White Cooking Wine

1

clove

Garlic, thinly sliced

1/4

tsp

Crushed red pepper flakes

Clams

tbsp

Chopped fresh flat-leaf parsley

 

Procedure:

  1. Cook your linguine for about 7 mins till al dente. Set aside.
  2. On a separate pan over medium heat, heat 3 tbsp. extra virgin olive oil. Add garlic and cook, until golden. Add red pepper flakes & cook for 15 mins.
  3. Add wine and clams & increase heat. Cook until clams open.
  4. Add 1/4 cup of pasta water and linguine. Cook & toss with the parsley until sauce is soaked up. Serve and drizzle with remaining extra virgin olive oil.
