Sheet-Pan Mozzarella Caprese Gnocchi

Mazza Potato Gnocchi 500g

Mazza Extra Virgin Olive Oil 500ml

Euro Chef Mozzarella Cheese Block 200g

Mazza Black Balsamic Glaze 400ml

Red, orange or yellow bell peppers, roughly chopped

3

cloves

Garlic, minced

 

Kosher salt

 

Freshly ground black pepper

 

pinch

Crushed red pepper flakes

 

Fresh basil leaves, torn

 

Procedure:

  1. On a baking pan lined with a large sheet pan, place bell peppers, gnocchi and garlic. Coat with 2 tbsp. extra-virgin olive oil, salt, pepper and red pepper flakes and grate some mozzarella on top.
  2. Place the baking pan in a 425º F preheated oven for 30 minutes
  3. Toss at the halfway mark or until peppers are softened & gnocchi are browned.
  4. Top with basil & drizzle with 1 tbsp. olive oil and balsamic glaze. Enjoy!
