Procedure:
- On a baking pan lined with a large sheet pan, place bell peppers, gnocchi and garlic. Coat with 2 tbsp. extra-virgin olive oil, salt, pepper and red pepper flakes and grate some mozzarella on top.
- Place the baking pan in a 425º F preheated oven for 30 minutes
- Toss at the halfway mark or until peppers are softened & gnocchi are browned.
- Top with basil & drizzle with 1 tbsp. olive oil and balsamic glaze. Enjoy!
