WHAT YOU'LL NEED:

Ingredients QTY UOM
Ice, as needed

Happy Barn Milk, as needed

Matcha 4 grams
Mascarpone Cold Foam:

Pascal Mascarpone 2 tbsp
Pristine Whipping Cream 1 tbsp
Happy Barn Milk 1 tbsp
Toppings:
Matcha powder, dust

Marini Lady Finger 1 pc

 

STEPS:

  1. Prepare the Mascarpone Cold Foam by whisking Mascarpone, Whipping Cream, and Milk. Whisk until it is well incorporated or until it reaches its foamy texture.

  2. Soak your chasen in warm water for a good 2-3 minutes.

  3. Sift matcha powder into a bowl, then add water. Whisk quickly in a zigzag motion until a foam forms on top.

  4. In a glass, fill with ice.

  5. Pour in the cold milk and the matcha.

  6. Pour over the Mascarpone Mixture, then dust with matcha powder.

  7. Serve with lady fingers.
