Red Velvet Whoopie Pie



If you’ve ever grabbed a Red Velvet Whoopie Pie from Starbucks and wished you could recreate it at home, this recipe is for you. These whoopie pies are soft, cake-like, lightly chocolatey, and sandwiched with a smooth cream cheese filling that tastes just like the original—maybe even better fresh from your own kitchen.

WHAT YOU'LL NEED:

Red Velvet Cookies


Butter, Room Temperature
1/3 cup
White Sugar 3/4 cup
Eggs 2 pcs
Vanilla Extract  1 tsp
Buttermilk 1/8 cup
Milk 1 cup
Lemon juice or white vinegar 1 tbsp
Sour cream 1/8 cup
Red gel food coloring 1 tsp
All purpose flour 1 1/2 cup
Unsweetened cocoa powder 1/4 cup
Salt 1/2  tsp
Baking Powder 1 tsp
Filling
LAPED Quick Fondant 100 g
butter, room temperature 200 g


STEPS:

Filling

  1. Preheat the oven at 160 °C.

  2. In an electric stand mixer combine Quick Fondant and butter.

  3. Beat at maximum speed for about five minutes until creamy. Transfer in a piping bag with a star tip.

Red Velvet Cookies

  1.  Using an electric stand mixer fitted with paddle attachment cream together butter, granulated sugar until combined.

  2. Add the egg one at a time, buttermilk, sour cream and vanilla extract. Mix until well combined.

  3. In a separate bowl, combine all dry ingredients.

  4. Gradually add the dry ingredients to the wet ingredient, Once mixed, add in the food coloring. Mix until well combined. (Do not over mix)

  5. Transfer the doubt in a piping bag with a star tip. 

  6. In a baking tray lined with parchment paper, pipe the dough 2 inches apart.

  7. Bake in the oven for 15 minutes.

  8. Let cool on a baking sheet for 5 minutes, then transfer to a wire rack to cool.

  9. Once cooled, pipe the butter cream filling.

  10. Serve and enjoy with your favorite cup of coffee or warm milk.
