| Ginger Syrup | 1-2 | tbsp |
| Happy Barn Full Cream Milk | 50 | ml |

| Espresso | 1 | shot |
| Happy Barn Full Cream Milk | 120-150 | ml |

STEPS:
1. Wash and slice ginger thinly (no need to peel if clean)
2. Add ginger + water into a pot.Bring to a gentle boil, then simmer 10–15 minutes
3. Add sugar and stir until fully dissolved. Simmer another 5–10 minutes
4. Strain out ginger pieces. Press lightly to extract maximum flavor
Assembly
1. Make the silken tofu cream

Add silken tofu, ginger syrup and milk into a blender

Blend until completely smooth and silky

Adjust sweetness or thickness if needed
2. Prepare the coffee base

Brew espresso or strong coffee

Let it cool slightly if making iced version
3. Assemble the latte

Pour ginger syrup and add the ice

Pour milk + coffee

Top generously with tofu cream

Finish it with a dust of cinnamon powder in top
