WHAT YOU'LL NEED:

Ingredients QTY UOM
Dolce Vita Linguine Pasta 130 grams
Garlic Infused Oil 20 grams
Garlic, minced 3 cloves
Red Pepper Flakes 1 tsp
Parsley, chopped, for garnish
As needed Mazza Parmigiano Reggiano Cheese, grated
As needed Pasta water, salted

 

STEPS:

  1. For the pasta, bring a pot of water to a boil and season with salt. Cook the pasta for 3 minutes. After 3 mins, remove the pasta and reserve the pasta cooking water. 

  2. Transfer the pasta to a wide tray and spread it out. Leave it covered to allow it to cook through further. Lightly oil the pasta to prevent sticking. Once the pasta is fully cooled down, start cooking.
  3. To prepare the Garlic Oil, heat oil in a pan over low heat, then add the garlic and thyme. Cook until softened.  
  4. Use the infused oil to sauté the garlic in a skillet.
  5. Add the pasta into the pan and allow it to cook in the garlic oil before adding the pepper flakes. 
  6. Gradually pour pasta water and allow it to emulsify the sauce.
  7. Sprinkle chopped parsley and mix it through the pasta by tossing. Add another pasta water if needed.
  8. Garnish with parsley, pepper flakes, and a light grating of parmigiano.
