For the beef birria:

For the tacos:

STEPS:
To make the beef birria:
- Heat up the pan to very high heat, then sear beef until all sides are brown.
- Transfer the seared beef into a stock pot, add all the vegetables, herbs, and spices.
- Braise for 3 hrs until the beef falls off the bone.
- Remove from heat, separate the beef from the broth, then set aside.
- Shred the beef and set aside.
To make the taco:
- Get a pan to low heat, lightly dip the tortilla in the broth.
- Pan fry the tortilla, then add the beef, grated mozzarella, chopped onions, and some broth.
- Fold it in, finish browning on both sides.
- Serve with broth as dipping sauce on the side garnished with cilantro.
