Cacio e Pepe

Cacio e Pepe, literally means "cheese and pepper", is a simple yet flavorful recipe that only requires 4 ingredients - pasta, pecorino romano cheese, black pepper and salt. This dish is so easy to make and it is so good!

WHAT YOU'LL NEED:

Ingredients QTY UOM
Dolce Vita Spaghetti 3 Pasta 150 g
Ground Black Pepper 2 tsp
Garlic Chili 2 tbsp
Mazza Pecorino Romano Cheese 50 g
As much needed: pasta water

 

STEPS:

  1. Cook pasta noodles 1 minute less than the packaging instructions; drain, reserving 3/4 cup pasta water.

  2. On a medium sized bowl, add the garlic chili and grated pecorino. Mix until thick and well combined. Add in 2 tbsp of pasta water. Mix well and set a side.

  3. Using a medium sized pan, toast the black pepper on low heat until fragrant.

  4. Add in the remaining pasta water and bring to a simmer. Add in the pasta and toss.

  5. Add in the garlic chili and pecorino mixture. Toss until the pasta noodles are well coated with the sauce.

  6. Transfer onto a plate. Top with more garlic chili and finely grated pecorino. Serve warm. Enjoy!
