WHAT YOU'LL NEED:
For the potato croquette:

Large Potatoes (peeled and cut into cubes) | 2 | piece |

Egg | 1 | piece |
Parsley (chopped) | 1 | tbsp |
Euro Chef Mozzarella Cheese (cut into cubes) | 200 | g |
For the breading:

Flour | 1/2 | cup |
Egg | 1 | piece |
Bread Crumbs | 1 1/2 | cup |
STEPS:

Place the potatoes in a large pot filled with cold water, enough to cover the potatoes.

Season with salt. Bring into a boil and cook until fork tender.

Once cooked, drain the potatoes and transfer into a large mixing bowl. Mash the potatoes.

Add in the 2 tbsp flour, 1 piece of egg, chopped parsley, salt and pepper. Mix until well combined.

Scoop a mixture of mashed potatoes. Stuff it with a cube of cheese, making sure the ball is fully sealed.

Dredge each piece in 1/2 cup flour, 1 piece cracked egg, and breadcrumbs. Repeat the process until all of the mashed potato mixture are coated.

Deep fry for 2-4 minutes or until golden brown. Remove from oil and allow the croquettes to cool.
