Chicken Tikka Masala

WHAT YOU'LL NEED:

For the chicken marinade:

Ingredients QTY UOM
Chicken Thigh Fillet 500 g
Tumeric Powder 1 tsp
Cumin 1 tsp
Garam Masala 1 tsp
Lemon Juice 2 tsp
Ginger (grated) 1 tsp
Garlic (grated) 1 clove
Yogurt 1/3 cup
Salt 1 pinch

 

For the sauce:

Ingredients QTY UOM
Cooking Oil/Butter/Ghee 2 tbsp
Ginger (grated) 1 tbsp
Garlic (minced) 2 cloves
Onion (chopped) 1/2 cup
Chiquilin Turmeric 1/2 tsp
Garam Masala 2 tsp
Tomato (crushed) 1/2 cup
Cashew Nut Paste 2 tbsp
Butter 2 tbsp
Cooking Cream 1/2 cup
For garnish: chopped cilantro

 

STEPS:

  1. Marinate chicken with turmeric, cumin, garam masala, paprika, cayenne, lemon juice, yogurt, salt and pepper. Cover with plastic wrap and place it in the refrigerator. Marinate for at least 30 minutes.

  2. Heat a non stick skillet over medium-high heat. Add cooking oil/ghee/butter. Sear the  marinated chicken until all sides are golden brown. Remove from pan and set aside.

  3. Using the same pan saute ginger, garlic, and onions until softened. Followed by turmeric and garam masala. 

  4. Add in the crushed tomatoes and reduce for at least 2 minutes. 

  5. Add in the seared chicken followed by the cashew nut paste. Stir. 

  6. Cover with lid and simmer for 5-10 minutes or until the chicken is cooked through and sauce is thickened.

  7. Adjust seasoning if needed. Finish with butter and cream. Serve over rice and garnish with cilantro.
